Potato Cake


(one a spice cake, the other a chocolate cake)

1 cup butter, softened
2 cups sugar
4 eggs
1 cup mashed potatoes
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon cloves
1 cup milk
1 cup raisins
1 cup chopped nuts


Directions
In a mixing bowl, cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each addition. Blend in potatoes and vanilla. Combine flour, cocoa and baking soda and other ingredients; add alternately with milk, blending well after each addition. Stir in nuts. Pour into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 350 degrees F for 40-45 minutes or until cake tests done. Cool on a wire rack. Can also cook in iron skillet.


Chocolate Potato Cake

Mix:
4 eggs
1 cup mashed potatoes
2 cups all-purpose flour
1/2 cup baking cocoa
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
Cream:
1 cup butter or lard
2 cups sugar
Add:
1 teaspoon vanilla extract
1/3 cup milk
1 cup chopped nuts
